Dry white wine | |

Preparation
The first step in making castagnole dough balls is to combine flour, eggs, sugar, vanilla sugar and yeast, salt, softened butter then knead together, adding white wine as required to obtain a medium soft dough.
Knead the dough for about 10 minutes then cut it into pieces, roll these into small cylinders about the size of your middle finger. Chop these into 2 cm chunks, roll them into balls then fry in plenty of boiling oil, turning continuously.
Once the balls are nicely puffed up, remove from the oil, drain on absorbent paper, sprinkle with vanilla sugar and also a drizzle of rum, if you like.
Your Carnival castagnole are ready to be served!
