Molino Cosma chickpea flour | 300 g |
Water | 900 ml |
Extra-virgin olive oil | 50 g |
Extra-virgin olive oil to grease tray | 70 g |

Preparation
Mix the chickpea flour with the water, making sure to whisk away any lumps, add salt and leave to rest for at least 4 hours.
Use a slotted spoon to remove any foam forming on the surface.
Add the extra virgin olive oil and mix well with a wooden spoon until the oil has been absorbed.
Characteristics
Versare il composto in una teglia formando uno strato sottile (in caso suddividere l’impasto in più teglie) e infornare a 220° per 15-20 minuti, deve formarsi una crosticina, servire bollente con una spruzzata di pepe.
