To make banana bread, start by mashing 3 or 4 very ripe bananas with a fork and sprinkle them with a few drops of lemon juice to stop them from turning black. Beat the soft butter and sugar together in a bowl until frothy, then add the two eggs, mix well then add a pinch of salt.
Add the mashed bananas and combine with the rest of the ingredients. Finally, sift the flour, baking powder and bicarbonate of soda and add to the mixture, stirring constantly.
Season with half a teaspoon of cinnamon powder (9).
Grease and flour a loaf tin measuring roughly 24x12x7, and pour the mixture into it (filling no more than 2/3 of the mould) then bake at 180°C for about 60 minutes. Test the sponge with a toothpick to check if it’s cooked (toothpick should come out clean).
Serve the sliced banana bread cold, toasted or gently warmed in the oven.
